ALTERNATIVE TO CRYSTALLISED VANILLA

 

 

Introduction

The use of CRYSTALLIZED VANILLA is widely extended in the food industry and in various sectors: it is used in cookies, prepared desserts, industrial pastries, etc...

The CRYSTALLIZED VANILLA is industrially obtained through a chemical synthesis, having a legal qualification of aroma to taste in some countries (in Spain, for example, it is considered as Identically Natural, while in the USA it is considered as Artificial).

Even though this product may be far from the natural flavour of the vanilla extract stems (making its use prohibitive in many applications due to is price), it is assumed, due to its important consumption, including the industrial sector, as an aroma and taste of vanilla, confusing it with the natural product.

From a standpoint of smell-taste, the CRYSTALLIZED VANILLA presents deficiencies, not simply for its unsimilarity to the natural product, but by being defined as a product of synthesis, it does not present compensated aromas, with the danger of unwanted connotatives (cartonnage or metallic taste) in cases of inadequate dosification.

If CARINSA, had to recommend a vanilla flavour for a new development, CARINSA would suggest other more precise specific aromas, based on product standpoint and the market involved.

CARINSA also recognizes the problem faced by the Marketing and/or Technical Department when it comes to change an already introduced product bouquet in the market, with its faithful consumers, using a determined product and the risks involved or the cost analysis such change would involve to obtain a higher aromatic quality, although, even if the decision-making comes from the experts, the final decision is dependent of the consumer.

Consequently, and in view of the market evolution and the price for the vanilla product, CARINSA has decided to initiate a study of alternative products to offer the industrial sector, one of which we are very pleased to introduce below with some reasoning's to be considered.

To a customer with a high consumption, all this can represent a considerable savings without going through any change in quality, points of which are explained below.

Main  features are:

  • Same physical features (powder version).

  • Same dose as crystallised vanillin.

  • Same performance in finished products.

  • Same labelling.

  • More economic.

  • A more stable price.
